Sunday: Participants arrive throughout the day. Relaxed walks, dinner, and orientation take place; tour packets are distributed.

Monday, Tuesday, Thursday, and Friday: At the Tevere-Farfa Inn location participants enjoy hands-on cooking classes, followed by “il pranzo”—lunch. A leisurely siesta precedes late-afternoon tours of the Roman countryside's castles, ruins, museums, and organic food producers. An optional one-hour trek on an easy mountain trail is offered. Back at the inn, an 8:30 dinner closes the day.

At the Palazzo Montasola location, participant pursue morning or afternoon cooking classes with sightseeing built-in. Classes take place in a medieval palace with picturesque rooms and heirlooom furnishings; the meal follows in the palace dining room. One special class is held at the artisanal trattoria Quello Che C'è, C'è, taught by its renowned chefs. During day tours, lunches vary from meadow picnics to unique places offering a menu treat.

Wednesday: The group visits panoramic Rieti's catacombs and enjoys an outdoor lunch at Le Fontanelle's splendid farm setting. Depending on group perference, the afternoon includes shopping or a visit to the 13th century Greccio sanctuary, one stop on St. Francis's famous "walk."

Saturday: The group visits spectacular Siena, with a morning tour of the Campo's Palazzo Pubblico, lunch at a unique Sienese restaurant, and free time in the afternoon for more sightseeing or shopping. Back at Palazzo Montasola on this last night of the tour, the group learns to make various liqueurs.

Sunday: participants are helped to the airport train, or with other travel connections if remaining in Europe.
